my scale is broken...i can't get it to do anything...so i can't weigh in..no idea. probably gained weight..it was a bad, bad, bad week for me. I feel like I am retaining water...is that normal for starting to eat healthier and lose weight?

ok just kidding, when the boys got home it somehow reset the scale and it worked

So this was my delish dinner tonight! Voila Chicken Florentine which is Grilled chicken, penne pasta, diced tomatoes, spinach and yellow squash in a basil parmesan sauce! Super YUMMY!!! And only 230 calories for 1 serving which is 1 3/4 cups! -Ashley oh also, it was from a bag! haha but still way good! you can get it at smiths for 3.50 or something like that! its called Voila!

Do you know who Ruby is? Ruby is a woman who weighed at her top 716 lbs. Why can't I get the picture to upload?! GRRR!!

Ok so she was diagnosed with diabetes and her doctor told her that if she didn't start losing weight, she would be dead in a couple years. So she started her journey through diet and exercise. Style TV has a program about her, its on Sunday nights at 9. I ran across this yesterday and watched it all day. Sometimes I guess they have reruns of it on all the time.

She has totally inpsired me. She is now down to 325 lbs. On her show she gives tips and what not about what is she doing, but I found a blog that she does on the style tv's website. Here is a link to one of them that I really liked.

It is really amazing to see her go from 716 lbs to 325 lbs. In the episode that was just on, she had a chair made to fit her..it was like a love seat that they put arms on. and she was really attached to that chair. But now, its huge for her and her normal sized friend was able to sit in it with her..so they got rid of it and she got a new chair, and she said that she didn't really realize that she would be able to fit in a "normal" size chair. She also put a lot of different mirrors around her house, to show her the truth about what she looked like. She said that she would look in the mirror and not see how really big she was. And that is what got her to the 716 lbs. She now can see everything, like when she sits at the kitchen table, there is a mirror that shows her rolls.
Anyway, just thought I would share this with you. I guess she has a book also that you can buy. Her name is Ruby Gettinger. You should google it.

Ok so Mike lost 5 lbs, 2.5%

I lost 6 lbs, 2.7%

great first week!

Jon lost 5 lbs this week, (1.78%)and i lost 5 lbs also for a 3.22 % weight loss percentage. yay!!!

What worked for me was portion control, Kickboxing for dummies and Latin Dancing workout DVD. I also ate apples,carrots and nuts only for snack everyday at work this week. I was really good despite many coworkers tempting me with chocolates, cookies and chinese food. ha ha ha. I just imagined my winnings at the end of 8 weeks and that was enough to keep me saying "No" to these temptations.

I also encouraged Jon to use portion control, no eating out and no white bread, just wheat.

No recipes and pictures from me because i didn't really fix anything exciting this week.

April told me this was really good and to post it.

Salsa Chicken

chicken breast frozen or fresh
Salsa usually a big bottle of it

Just put the two in a crock pot and cook it. Make sure you have enough salsa to cover the chicken, Usually takes about 3-4 hours. Depending on the size of your chicken.

Then you can make a spanish rice side if you want. Or I like to just put it in a salad and have a chicken taco salad.

I have a recipe for healthier Chicken Taquitos.
But when I did it, the corn tortilla's didn't work, fell apart and were super hard. So we took the filling out and put in our rice and my kids LOVED it. I put it in a salad.

All it is is,

big can of chicken 98% fat free, drained
1 cup of salsa
1/4 teaspoon taco seasoning

Mix it all together and put it in the fridge for 15 minutes and drain off any excess water.

This was super yummy in a salad. Instead of a lot of dressing on the salad, Iuse salsa and then like a 1/2 tablespoon of regular dressing. I don't like light or fat free dressing.

I am a BIG taco salad eater, its my favorite thing. But the hamburger really isn't that good for me, so using chicken is a great alternative. In fact, I am eating a chicken taco salad right now :)

Ok so I lost 9 lbs...woot, woot, woot, woot! I am so excited!! With a total percentage loss of 2.6 so i guess almost 3% right?!

Spencer lost 4 lbs for a 3.2% weight loss...if I am calculating this right!
Chris lost 3 lbs for 1.8% weight loss. I hope people don't care that my kids are doing it also.

I have taken out my eating out. I would eat out for lunch and then all the time on the weekend when my kids weren't here. It was cheaper for me to go get $3 worth of food at Burger King or Mcdonald's. I have also been walking around, me and the kids have been going to that park by the cemetry in Orem, to go around that thing. it's been fun. And I have been eating less, and more salad and fruit.

I like taking pictures of food, I just wish I was a better photographer. I fixed this last night for dinner. It's a really easy recipe, and everyone liked it. I'll post it if anyone's interested.

One of my very favorite snacks

I eat apples every day. But this... this is my alltime favorite snack - ever! 1 sliced apple sprinkled w/ salt, and about 1 tablespoon or so of natural peanut butter with 10 reduced fat wheat thins. Soooo good!

Chicken Packets - Recipe

Ok so I thought I would post our dinner tonight. It was really easy - and if you only eat ONE, it's not that high in calories.

Here's what you'll need:
2 cans crescent rolls (I got reduced fat)
Italian Bread Crumbs
2 tablespoons butter
4 oz cream cheese (lowfat)
1 lg can chicken (or 2 cups regular cooked chicken breast)
2 tablespoons milk Let's Get Started:
Preheat your oven to 350 and spray a rectangular baking sheet with Pam. Unroll the first package of crescent rolls. Each tube will contain 4 rectangles of dough with a diagonal perforation. Press along diagonal perforation to seal together and arrange on baking sheet.

Mix chicken, softened cream cheese, and milk a large bowl. Then I mix in the chicken and milk. Stir that up really good, then start spooning it into the middle of each rectangle. Make sure you leave some room on the edges so you can seal the packets. Open the second package of crescent rolls and lay those 4 rectangles over your chicken mixture.

Melt 2 tbsp butter in a small bowl and brush over packets. Sprinkle on seasoned breadcrumbs.

Bake at 350 for 20-25 minutes until golden brown and crescent rolls are cooked through.

ENJOY!

You can find these in the bread aisle, or somewhere close to the bread aisle. I really like them. They are super good! They are like $2.50 for the package. 100 calories each.

Ground Turkey?

Do any of you use ground turkey for real? Instead of hamburger? I know that I use a lot of hamburger and I know it isn't good for us...but what else can I do? I have also heard about meatless crumbles or something made by boca..but is ground turkey really ok to use? I mean can you really not tell a difference?

Spencer and I are in it...I am adding $5 for Spencer into the pot as well. I haven't really been able to start, start...but I am eating less and moving more. Mostly its the same foods that I had before, i don't have money to buy new stuff..but I really, really want to start this and lose some weight. I am tired of it!

Baked Oatmeal

I used to make this ALL the time for breakfast - it's really good and a great way to get in your oatmeal!!

BAKED OATMEAL

2 cups quick oats
1 1/2 teaspoon baking powder
1 egg
1/2 cup applesauce
1/4 cup brown sugar
1/4 cup raisins
1 teaspoon cinnamon
1 teaspoon vanilla

Mix ingredients together. Pour into a 8x8 pan sprayed w/ pam. Bake at 350 for approx 30 minutes until done.

Taco Chili

Here's another SUPER easy but very yummy recipe...

TACO CHILI

1 large can crushed tomatoes
1 can Great Northern White Beans, drained
1 can Kidney Beans, drained
1 can Black Beans, drained
1 lb lean ground beef or ground turkey
1 small can diced green chilies
1 can corn, drained
1 cup water
1 package Taco Season
1 package dry Ranch Mix

Brown ground beef or turkey and rinse grease off (I put the meat in a collander and let run over hot water.) Add all the rest of the ingredients.

We eat w/ a little sour cream, shredded cheese and tortilla chips.

Lime Chicken Soft Tacos

This is a recipe I use ALL the time - Mike absolutely LOVES it, and it's super healthy!

LIME CHICKEN SOFT TACOS

2 lb boneless skinless chicken (I usually use 2 large breasts)
1/2 cup red wine vinegar
2 or 3 whole limes - juiced
2 teaspoon sugar (I use splenda)
Cilantro, chopped (as much as you like)
1 teaspoon salt
1 teaspoon pepper
5 green onions - chopped
4 cloves garlic - chopped

Sautee chicken in Pam until cooked. Cut into small pieces. Add rest of ingredients and simmer for approximately 10 minutes.

I serve these on the Low-Carb Mission Brand Whole Wheat Tortillas.

LAMOREAUX family Biggest Loser Part 2

Ok here it is...

Anyone can post here, change whatever you want, if you want a different background or whatever...

I think we should use this to post recipes, tips that are working...talk trash to one another..lol!

And of course we will be putting our weight lost and percentage...
To calculate the percentage...you take your weight you lost and divide it by your starting weight.
so say I weigh
500 lbs in one week i lost
15 lbs. I take 15 lbs and divide that by 500 and that gets me 0.03 or 3% weight loss percentage.
We are going to go by the total weight loss percentage by May 16th. So that means if on May 16th I weigh 450 lbs, that means I lost a total of 50 lbs, divide that by my starting weight of 500. That's 0.10 or 10% weight loss.

It will start March 22 and go until May 16th. We will all weigh in each week to update each other on our weekly progress...post a new blog on here about it or just comment on the post for the weight loss... There is no need to post specifically what our weights are...just the weight loss percentage will do.


Let the best loser win..hahaha!
